I attended a potluck breakfast awhile back and one of the ladies brought an amazing recipe that contained three ingredients, Sausage, Cheese and Bisquick. I know what your saying...REALLY? What is the binding ingredient? That doesn't sound crazy flavorful! Guess what? These babies are FLAVOR BOMBS! I saw several variations on Allrecipes.com for this recipe ranging from the amount of Bisquick to the cook time. Since I couldn't remember the recipe my potluck friend told me, I decided to do a combination of several different recipes from Allrecipes.com.
Bisquick Sausage Bites:
1lb Jalpeno sausage
2.5 Cups cheese
3 Cups Bisquick
Water, as needed
Preheat oven to 350F
Thoroughly combine ingredients...this is going to take some serious elbow grease because you are forcing the sausage and cheese and Bisquick together and I think they are secretly enemies. Be forewarned. As water as needed. Roll into 1.5 inches balls of dough and put on cookie sheet. Cook for 25 minutes.
These little bites are ADDICTIVE! Oh my goodness! I could eat them all day, in fact, that is just what I did the day I made them, breakfast, snack and lunch! The next time I make these babies I'm going to use less Bisquick and more cheese.

Biscuits, Texas Style
Friends, our buddy the Homesick Texan makes a mean biscuit! I saw this post a week or two ago and have been dreaming about it since. Fortunately, I didn't botch it up. These little guys were surprisingly easy to make. I always thought making biscuits from scratch was a long and drawn out process, but it's not!
Biscuits:
2 cups of flour
1 tablespoon baking powder
1 teaspoon of sugar (can add more to taste)
1/2 teaspoon of salt1 stick of butter, cold (8 tablespoons)
3/4 cup of buttermilk, cream or half-and-half
Preheat the oven to 450 degrees.
Mix all the dry ingredients together.
Cut the stick of butter into pieces, and work into the flour mixture with your hands or a pastry blender until it resembles pea-sized crumbs.
Add the liquid, mixing until a bit loose and sticky.
Pour dough out on a floured surface, and knead for a minute. Dough should be smooth and no longer wet. You can sprinkle more flour on the surface if you find it’s sticking. Take dough into a ball, and hit it with a rolling pin, turning it and folding it in half every few whacks. Do this for a couple of minutes.Roll out dough until it’s 1/4 of an inch thick, and then fold it in half.
Using a round cutter (can use a glass or a cup if don’t have a biscuit cutter) cut out your biscuits from folded dough.
Place on a greased baking sheet close together (so they rise up not out), and bake for 15 minutes or until the tops are golden brown.
Makes 10-12 biscuits.
I was kinda nervous about beating the biscuits so I only did it a couple of times. It don't know if beating makes them more dense or what...but they turned out FABULOUS! I expect to makes these a LOT! I am one step away from making biscuits and gravy from scratch for my Sweetie!

Pumpkin Drop Biscuits
I finally made it to the store to get me some pumpkin puree so I could make the Pumpkin Drop Biscuits from Megan's Munchies blog. Well worth the trip to the grocery store. I had a couple of mishaps while I was making the biscuits and I was certain I had destroyed the recipe, only to find that they weren't bad at all.
Instead of using the gluten free all purpose baking mix I opted for what I had on hand, Bisquick. I was a little nervous about the substitution because I'm not really sure the difference between Bisquick and gluten free all purpose baking mix. Initially I added 1 1/2 cups of Bisquick and couldn't understand why the batter was so runny.
I added the additional cup of Bisquick and thought my problem was solved, but the batter was still runny like cupcake batter.
I didn't want to throw out the mix because it had that pumpkin goodness in it, so I threw it into my trusty pumpkin cupcake tin and baked according to the instructions. 
Pumpkin Drop Biscuits:
makes 12 biscuits
2 1/2 cups gluten free all purpose baking mix
2 cups skim milk
1/4 cup brown sugar
1 1/4 teaspoon pumpkin pie spice
3/4 cup canned pumpkin
1 tablespoon water

Mix baking mix, brown sugar, and pumpkin pie spice.
Stir in pumpkin, milk, and water until all is moist.
Drop into 12 heaps onto baking sheet prepared with non-stick spray.
Bake at 425 degrees for 15 minutes. If tops start to brown too fast, reduce heat to 375 degrees for the last 5 minutes.

FANTABULOUS!!!! These turned out pretty yummy for a recipe I thought I botched. The next time I make this, I am going to reduce the amount of milk. There is a recipe for drop biscuits on the side of the Bisquick box that I would mimic to give these more of a biscuit consistency. I LOVE the flavor of this recipe. I took these babies into work today and my co-workers LOVED them! 
Look how cute this cupcake/biscuit looks? There is something to said about eating food that looks good. This just screams, 'I am yummy pumpkin goodness. Open your mouth and eat me!' O.K., so I talk to my food and it talks back to me...What's a girl going to do?
